Ingredients

For the Brussel Sprout Lollipops:
• 18 medium Brussels sprouts, trimmed
• 9 slices prosciutto, halved lengthwise
• 2 tbsp olive oil
• Salt & pepper
• Sturdy cocktail picks or food-safe skewers

Rosemary Browned Butter Drizzle:
• 4 tbsp butter
• 1 sprig fresh rosemary
• ½ tsp lemon zest
• Pinch of flaky salt

How to Make

1. Roast the Brussels Sprouts

1️⃣ Preheat oven to 425°F. Use parchment lined baking sheet.
2️⃣ Toss sprouts with olive oil, salt, and pepper.
3️⃣ Roast for 18–20 minutes, until tender and lightly browned.
4️⃣ Let cool just enough to handle, use tongs or gloves.

2. Wrap with Prosciutto

1️⃣ Wrap each Brussels Sprout with a strip of prosciutto.
2️⃣ Secure with a cocktail pick to create a “lollipop.”
3️⃣ Put back in the over for up-to 5 minutes. Watch closely, prosciutto browns quickly.

3. Make the Rosemary Browned Butter

1️⃣ Melt butter in a small skillet over medium heat.
2️⃣ Add rosemary sprig and cook until butter foams and turns light golden brown.
3️⃣ Remove from heat; stir in lemon zest and a pinch of flaky salt.
4️⃣ Remove rosemary before serving.

4. Serve

Arrange the lollipops on a platter.
Drizzle warm rosemary browned butter over the top.
Finish with extra flaky salt or a fresh rosemary garnish.
