1. Prepare the Crust
Preheat oven to 325°F.
Line an 8×8-inch baking pan with parchment paper, leaving flaps to lift bars out easily later.
In a mixing bowl, combine:
1½ cups almond flour
3 tbsp melted butter
2 tbsp allulose
½ tsp cinnamon
Stir until the texture resembles wet sand.
Press crust mixture firmly and evenly into the prepared pan.
Bake for 8 minutes.
Remove and let cool slightly while you prepare the filling.
2. Make the Cheesecake Filling
In a medium bowl (or stand mixer), beat 12 oz softened cream cheese until smooth and creamy.
Add ½ cup allulose and continue mixing until fully incorporated.
Add 2 eggs, mixing one at a time until blended (don’t over-beat — it keeps the texture creamy).
Add:
1 tsp vanilla
Zest of 1 orange
2 tbsp fresh orange juice
Mix until smooth, scraping down the sides of the bowl.
3. Make the Cranberry Swirl
In a small saucepan over medium heat, combine:
1 cup fresh cranberries
¼ cup allulose
2 tbsp water
Cook for 5–7 minutes, stirring occasionally, until cranberries burst and soften.
Lightly mash to create a thick, jam-like mixture.
Allow to cool 2–3 minutes.
4. Assemble the Bars
Pour the cheesecake filling over the pre-baked crust and smooth the top.
Add spoonfuls of cranberry mixture over the filling.
Use a toothpick or skewer to create gentle swirls (avoid over-mixing).
5. Bake
Bake at 325°F for 25–28 minutes, or until the center is mostly set with a slight jiggle.
Remove from oven and cool at room temperature for 1 hour.
Transfer to the fridge and chill 2–3 hours (overnight is even better!).
6. Slice & Serve
Lift bars from the pan using parchment flaps.
Slice into 12 squares. Wipe the knife after each slice for clean lines.
