1. Prepare the Crust

  2. Line an 8×8-inch baking pan with parchment paper, leaving flaps to lift bars out easily later.

  3. In a mixing bowl, combine:

    • 1½ cups almond flour

    • 3 tbsp melted butter

    • 2 tbsp allulose

    • ½ tsp cinnamon

  4. Stir until the texture resembles wet sand.

  5. Press crust mixture firmly and evenly into the prepared pan.

  6. Bake for 8 minutes.

  7. Remove and let cool slightly while you prepare the filling.

2. Make the Cheesecake Filling

  1. In a medium bowl (or stand mixer), beat 12 oz softened cream cheese until smooth and creamy.

  2. Add ½ cup allulose and continue mixing until fully incorporated.

  3. Add 2 eggs, mixing one at a time until blended (don’t over-beat — it keeps the texture creamy).

  4. Add:

    • 1 tsp vanilla

    • Zest of 1 orange

    • 2 tbsp fresh orange juice

  5. Mix until smooth, scraping down the sides of the bowl.

3. Make the Cranberry Swirl

  1. In a small saucepan over medium heat, combine:

    • 1 cup fresh cranberries

    • ¼ cup allulose

    • 2 tbsp water

  2. Cook for 5–7 minutes, stirring occasionally, until cranberries burst and soften.

  3. Lightly mash to create a thick, jam-like mixture.

  4. Allow to cool 2–3 minutes.

4. Assemble the Bars

  1. Pour the cheesecake filling over the pre-baked crust and smooth the top.

  2. Add spoonfuls of cranberry mixture over the filling.

  3. Use a toothpick or skewer to create gentle swirls (avoid over-mixing).

5. Bake

  1. Bake at 325°F for 25–28 minutes, or until the center is mostly set with a slight jiggle.

  2. Remove from oven and cool at room temperature for 1 hour.

  3. Transfer to the fridge and chill 2–3 hours (overnight is even better!).

6. Slice & Serve

  1. Lift bars from the pan using parchment flaps.

  2. Slice into 12 squares. Wipe the knife after each slice for clean lines.
