Ingredients
Almond Flour Crust (Gluten-Free)
• 1½ cups almond flour
• 3 tbsp cocoa powder
• 3 tbsp melted butter
• 2 tbsp sugar or allulose
• ¼ tsp salt
Chocolate Filling
• 2 cups heavy cream
• 8 oz dark chocolate (70–85%), chopped
• 3 tbsp sweetener of choice
• 1 tsp vanilla
• ½ tsp peppermint extract
Toppings
• Whipped cream
• Shaved dark chocolate
• Sugar-free peppermint “crush” or crushed GF peppermint candy (optional)
⭐How to Make It
1. Make the Crust
1️⃣ Preheat oven to 350°F.
2️⃣ Mix almond flour, cocoa powder, melted butter, sweetener, and salt.
3️⃣ Press into a 9-inch pie dish.
4️⃣ Bake 8–10 minutes. Cool completely.
2. Make the Filling
1️⃣ Heat heavy cream in a saucepan until steaming (do not boil).
2️⃣ Remove from heat, add chopped chocolate and sweetener.
3️⃣ Let sit 2 minutes, then whisk until totally smooth.
4️⃣ Stir in vanilla and peppermint extract.
5️⃣ Pour filling into cooled crust.
6️⃣ Chill 3–4 hours (or overnight for clean slices).
3. Add Toppings
Top with whipped cream, chocolate shavings and crushed GF peppermint candy bits
