🛒 Ingredients

Peppers

• 3 large bell peppers (1 red, 1 orange, 1 yellow)

• 2 tbsp extra virgin olive oil

• Salt & freshly cracked pepper

Lamb Filling

• 1½ lbs ground lamb

• 1 small shallot, finely diced

• 3 garlic cloves, minced

• 2 cups baby spinach, chopped

• ½ cup Kalamata olives, chopped

• ⅓ cup toasted pine nuts

• ¾ cup crumbled feta cheese

• 1 tsp dried oregano

• 1 tsp ground cumin

• ½ tsp coriander

• ½ tsp smoked paprika

• Salt & pepper

Whipped Feta

• 6 oz feta cheese

• ¼ cup full-fat Greek yogurt

• 2 tbsp cream cheese

• 1 tbsp olive oil

• Juice of ½ lemon

Basil Oil

• ½ cup basil leaves

• ¼ cup olive oil

• Pinch sea salt

Blend until smooth.

Garnish

• Blistered cherry tomatoes

• Fresh parsley

• Fresh mint

• Lemon zest

• Toasted pine nuts

Instructions

1️⃣ Roast the Peppers

Preheat oven to 400°F.

Slice peppers in half lengthwise and remove seeds.

Brush lightly with olive oil.

Season with salt and pepper.

Roast for 15 minutes until just beginning to soften.

2️⃣ Toast the Pine Nuts

Heat a dry skillet.

Toast pine nuts 2–3 minutes, stirring frequently.

Remove immediately.

3️⃣ Cook the Lamb

Heat a large skillet over medium-high heat.

Cook lamb until browned.

Drain only excess fat if necessary.

Add:

• shallots

• garlic

Cook another 2 minutes.

4️⃣ Build the Filling

Stir in:

• spinach

• olives

• oregano

• cumin

• coriander

• smoked paprika

Cook until spinach wilts.

Fold in:

• feta

• toasted pine nuts

Taste and adjust seasoning.

5️⃣ Stuff

Generously fill each roasted pepper.

Bake another 15–18 minutes.

6️⃣ Blister Tomatoes

While peppers bake,

Cook cherry tomatoes in a hot skillet with olive oil for about 4 minutes until blistered.

7️⃣ Make Whipped Feta

Blend:

• feta

• Greek yogurt

• cream cheese

• olive oil

• lemon juice

until smooth.

8️⃣ Plate

Spread whipped feta onto the serving platter.

Arrange peppers on top.

Scatter blistered tomatoes around.

Drizzle basil oil.

Finish with:

• parsley

• mint

• toasted pine nuts

• lemon zest
