4 salmon fillets, 5–6 oz each
1 tablespoon extra-virgin olive oil
Zest of 1 lemon
1 garlic clove, finely grated
½ teaspoon sea salt
¼ teaspoon freshly cracked black pepper

For the Rainbow Vegetables
1 medium zucchini, sliced into half-moons
1 small yellow squash, sliced into half-moons
1 red bell pepper, cut into strips
1 cup broccoli florets
1 cup asparagus, cut into 2-inch pieces
½ cup cherry tomatoes
2 tablespoons extra-virgin olive oil
½ teaspoon sea salt
Freshly cracked black pepper
Creamy Avocado Herb Sauce
1 ripe avocado
¼ cup fresh parsley
2 tablespoons fresh dill
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
1 small garlic clove
¼ teaspoon sea salt
2–4 tablespoons cold water, as needed

½ avocado, thinly sliced

👩🍳 How to Make
1️⃣ Prepare the Vegetables
Preheat the oven to 425°F.
Place the zucchini, yellow squash, bell pepper, broccoli, asparagus, and cherry tomatoes on a large parchment-lined sheet pan.
Drizzle with olive oil and season with sea salt and freshly cracked pepper. Toss gently until the vegetables are lightly coated.
Arrange them in a single layer with a little breathing room between the pieces. This helps them roast and caramelize rather than steam.
Roast for 10 minutes before adding the salmon.
2️⃣ Season the Salmon
While the vegetables begin roasting, pat the salmon fillets dry.
Combine the olive oil, lemon zest, garlic, salt, pepper, and fresh dill.
Rub the mixture gently over the top and sides of each salmon fillet.
Keeping the seasoning simple allows the natural richness of the salmon to remain the star of the bowl.
3️⃣ Add the Salmon
After the vegetables have roasted for 10 minutes, gently toss them and make room on the pan for the salmon.
Place the salmon skin-side down among the vegetables.
Return the pan to the oven and roast for another 10–14 minutes, depending on the thickness of the salmon and your preferred doneness.
The vegetables should be tender with lightly caramelized edges while still retaining plenty of color.
4️⃣ Make the Avocado Herb Sauce
While the salmon cooks, add the avocado, parsley, dill, lemon juice, olive oil, garlic, and salt to a blender or small food processor.
Blend until creamy.
Add cold water one tablespoon at a time until the sauce reaches a silky, spoonable consistency.
Taste and add a little more lemon or sea salt if desired.
5️⃣ Build the Bowls
Divide the roasted vegetables among four shallow bowls.
Rather than mixing everything together, arrange the different vegetables in loose sections so their individual colors remain visible.
Place one roasted salmon fillet in the center of each bowl.
Add a few slices of fresh avocado.
Spoon or sweep the avocado herb sauce alongside the salmon and vegetables.
6️⃣ Finish
Garnish with fresh dill and parsley, cracked black pepper, and a lemon wedge.
For a little extra texture, scatter a spoonful of toasted pumpkin seeds over the vegetables just before serving.
