Ingredients

Salad

• 2 cups baby arugula
• 1 cup strawberries, sliced
• 2 burrata balls
• ¼ cup fresh basil leaves
• ¼ cup keto candied pecans (recipe below)

Keto Candied Pecans

• ½ cup pecans
• 1 tbsp butter
• 1 tbsp allulose
• Pinch sea salt

Strawberry Vinaigrette

• 3 strawberries
• 3 tbsp olive oil
• 1 tbsp lemon juice
• 1 tsp Dijon mustard
• Salt & pepper to taste

👩‍🍳 How to Make

1️⃣ Make the Pecans

  1. Melt butter in a skillet over medium heat.

  2. Add pecans, allulose, and salt.

  3. Cook 3–4 minutes until lightly caramelized.

  4. Transfer to parchment and cool.

2️⃣ Make the Vinaigrette

Blend strawberries, olive oil, lemon juice, Dijon, salt, and pepper until smooth.

3️⃣ Assemble

  1. Arrange arugula on a platter.

  2. Scatter sliced strawberries and basil leaves.

  3. Tear burrata into large pieces and place throughout the salad.

  4. Sprinkle candied pecans over the top.

  5. Drizzle with strawberry vinaigrette.
