Chicken

• 6 bone-in, skin-on chicken thighs
• 1 tbsp olive oil
• Salt & black pepper

Olive–Lemon Sauce

• ½ cup mixed olives (green + kalamata), pitted & sliced
• 2 cloves garlic, minced
• ½ cup chicken broth
• 2 tbsp butter
• Juice of ½ lemon
• Zest of ½ lemon
• 1 tbsp capers
• 1 tbsp fresh parsley, chopped

👩‍🍳 How to Make

1️⃣ Crisp the Chicken

  1. Pat chicken dry (important for crisp skin).

  2. Season generously with salt and pepper.

  3. Heat olive oil in a skillet over medium-high heat.

  4. Place chicken skin-side down.

  5. Cook 8–10 minutes until deeply golden and crispy.

  6. Flip and cook another 6–8 minutes.

  7. Remove and set aside.

2️⃣ Build the Sauce

  1. Lower heat to medium.

  2. Add garlic and cook 30 seconds.

  3. Stir in olives and capers.

  4. Pour in chicken broth and simmer 3–4 minutes.

  5. Add butter, lemon juice, and zest.

3️⃣ Finish

  1. Return chicken to the pan.

  2. Spoon sauce over the top.

  3. Simmer 3–5 minutes until everything is glossy and combined.

🍽 Serve

Top with fresh parsley and extra lemon zest.

Optional pairing: sautéed spinach or roasted zucchini.
