🛒 Ingredients

• 16 Medjool dates (pitted)
• 4 oz chorizo sausage (crumbled)
• 3 oz goat cheese (softened)
• ¼ cup almonds, finely chopped
• 1 tbsp olive oil
• ½ tsp smoked paprika
• Fresh thyme or parsley for garnish

👩‍🍳 How to Make

1️⃣ Cook the Chorizo

Heat a skillet over medium heat.
Add chorizo and cook 5–6 minutes until browned and slightly crisp.
Remove from heat and let cool slightly.

2️⃣ Prepare the Dates

Slice each date lengthwise without cutting all the way through.
Gently open to create a pocket.

3️⃣ Stuff

Fill each date with:

  • a small spoon of goat cheese

  • a bit of cooked chorizo

Press gently to hold shape.

4️⃣ Add Crunch

Sprinkle chopped almonds over the top.
Lightly press so they stick.

5️⃣ Finish

Drizzle lightly with olive oil.
Sprinkle smoked paprika.

Bake at 375°F for 5–7 minutes.
