🛒 Ingredients

Dry Ingredients

• 1 cup gluten-free rolled oats
• 1 cup gluten-free all-purpose flour (with xanthan gum)
• ½ tsp baking soda
• ½ tsp sea salt
• ½ tsp cinnamon

Wet Ingredients

• ½ cup butter, softened
• ½ cup brown coconut sugar
• ⅓ cup allulose sweetener
• 1 large egg
• 1 tsp vanilla extract

Mix-in

• ¾ cup dark chocolate chips (I recommend Enjoy Life brand)

Optional…

• 2 tbsp chopped walnuts or pecans
• 1/8 cup shredded, unsweetened coconut

👩‍🍳 How to Make

1️⃣ Preheat

Preheat oven to 350°F and line a baking sheet with parchment paper.

2️⃣ Mix Dry Ingredients

In a bowl whisk together oats, gluten-free flour, baking soda, salt, and cinnamon.

3️⃣ Cream Butter & Sugars

In another bowl (or mixer) beat butter, coconut sugar, and allulose until smooth and fluffy (about 2–3 minutes).

4️⃣ Add Egg & Vanilla

Mix in egg and vanilla until fully combined.

5️⃣ Combine

Gradually add the dry ingredients to the wet ingredients and mix just until combined.

6️⃣ Fold Mix-ins

Fold in chocolate chips and nuts if using.

7️⃣ Scoop

Scoop about 1½ tablespoons of dough per cookie onto the baking sheet, leaving space between cookies.

8️⃣ Bake

Bake 10–12 minutes until edges are lightly golden and centers remain soft.

9️⃣ Cool

Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a rack.
