✫ Ingredients
6 slices bacon, chopped into bits
1 large head cauliflower, cut into florets
1 tbsp olive oil or tallow
1 small yellow onion, diced
2 cloves garlic, minced
3 cups chicken broth
1 ½ cups heavy cream
½ cup shredded white sharp cheddar
2 tbsp butter
Salt & black pepper to taste
Optional garnish: chives, extra bacon, cracked pepper, sour cream
✤ How to Make
1. Roast the Cauliflower
1️⃣ Preheat oven to 425°F.
2️⃣ Toss cauliflower florets with olive oil, salt, and pepper.
3️⃣ Roast 25 minutes, until golden and caramelized.
2. Cook the Bacon
1️⃣ In a large pot, cook chopped bacon until crisp.
2️⃣ Remove bacon and set aside, do not disgard the rendered fat.
3. Build the Soup Base
1️⃣ Add diced onion to the bacon fat; sauté 5 minutes.
2️⃣ Stir in garlic and cook 1 minute.
3️⃣ Add roasted cauliflower and chicken broth.
4️⃣ Cook on very low heat for 10 minutes to soften flavors.
4. Blend
1️⃣ Use an immersion blender to purée until smooth (or leave slightly chunky if preferred).
5. Finish
1️⃣ Stir in heavy cream, cheddar, butter, and 3/4 of the bacon bits.
2️⃣ Simmer 5 minutes until creamy.
3️⃣ Season to taste.
🍽 Serve
Ladle into bowls and top with:
Remaining Crispy bacon crumbles
Chives
Cracked pepper
Swirl in a tsp of whipped sour cream
