Keto Vanilla Chai–Spiced Bundt Cake with Vanilla Cream Glaze

Ingredients

Dry Ingredients:

• 2 ½ cups almond flour
• 3 tbsp coconut flour
• ½ cup granular allulose, monk fruit or erythritol
• 2 tsp baking powder
• ½ tsp salt

Chai Spice Mix:

• 2 tsp cinnamon
• 1 tsp ginger
• ½ tsp cardamom
• ¼ tsp nutmeg
• ⅛ tsp cloves

**Spiced are finely ground

Wet Ingredients:

• 4 large eggs, room temperature
• ½ cup melted unsalted butter or coconut oil
• ½ cup unsweetened almond milk (or heavy cream)
• ⅓ cup sour cream
• 1 tbsp vanilla extract
• Optional: ½ tsp almond extract

Vanilla Cream Glaze:

• ½ cup Keto powdered sweetener (Allulose, Monk Fruit, erythritol, etc)
• 2–3 tbsp heavy cream
• 1–2 tsp vanilla extract or vanilla bean paste
• Optional: 1 tbsp melted butter (for shine)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a Bundt pan and dust lightly with almond flour.

  2. Mix dry ingredients: In a large bowl combine almond flour, coconut flour, sweetener, baking powder, salt, and chai spices.

  3. Mix wet ingredients: In a separate bowl whisk together eggs, melted butter, almond milk or cream, sour cream, and vanilla.

  4. Combine: Pour the wet mixture into the dry mixture and stir until a thick, smooth batter forms.

  5. Fill bundt pan: Spoon batter evenly into the pan and tap gently to remove air bubbles.

  6. Bake for 38–48 minutes, or until golden and a toothpick comes out clean.

  7. Cool and release: Let cool 15 minutes, then invert onto a plate. Cool completely before glazing.

  8. Make glaze: Mix powdered sweetener, heavy cream, and vanilla until smooth. Adjust thickness as needed.

  9. Drizzle glaze over cooled cake and allow to set before slicing.
