🛒 Ingredients

Saffron Cauliflower

  • 2 large heads cauliflower

  • 3 tbsp olive oil

  • ½ tsp saffron threads

  • 2 tbsp hot water

  • 1 tsp sea salt

  • ½ tsp black pepper

  • ½ tsp smoked paprika

Pistachio Gremolata

  • ¼ cup shelled pistachios, finely chopped

  • 2 tbsp fresh parsley, minced

  • 1 tsp fresh thyme, minced

  • Zest of ½ lemon

  • 1 tbsp olive oil

  • Pinch of Himalayan pink salt, to taste

👩‍🍳 How to Make

1️⃣ Preheat oven to 425°F. Line a baking sheet with parchment.
2️⃣ Slice each cauliflower into ¾-inch thick steaks.
3️⃣ Bloom saffron in hot water for 2–3 minutes.
4️⃣ Mix saffron water with olive oil, salt, pepper, and smoked paprika.
5️⃣ Brush generously over both sides of the cauliflower steaks.
6️⃣ Roast 30–35 minutes, flipping halfway, until deeply golden and tender.
7️⃣ Mix all gremolata ingredients in a small bowl.
8️⃣ Spoon gremolata over hot cauliflower just before serving.
